Artichoke and Red Beans Salad سلطة خرشوف بالفاصوليا الحمرا


Red Beans is one of the richest foods in antioxidants, even richer than blueberries or cherries
Red beans are a good plant-based source of protein, with one cup providing more than two egg’s worth of protein. And are also an excellent source of iron, essential for shuttling oxygen to our working muscles.

Artichokes are a super food in every sense of the word. Because of its antioxidants as they offer a range of health benefits ranging from cancer prevention and immune support to protection against heart disease.


  • 1 1/2 cup frozen artichoke

كوب و نصف خرشوف مجمد 

  • 1 cup red beans

كوب فاصوليا حمرا 

  • 1 red bell pepper

ثمرة فلفل احمر الوان 

Dressing: الدرسينج

  • 3 tablespoons lemon juice

ثلاث م كبيرة ليمون

  • 1 1/2 tablespoons balsamic vinegar

١ ١/٢ م كبيرة خل بلسمك

  • Salt and pepper to taste

ملح و فلفل حسب الذوق


Place artichoke in a boiled water for 15 minutes then cut each to 4 quarters in a bowl.
Add the red beans and cut the bell pepper into squares and gently mix them.

For the dressing: mix all ingredients and add to the salad. Enjoy.


We can replace the frozen artichoke with canned artichoke hearts and in this case we will not cook it in a boiled water as its already cooked and make sure u wash it properly from its water.


يوضع الخرشوف في مياة علي النار لمدة ١/٤ ساعة. يرفع من علي النار و يقطع اربع تربع
تضاف الفاصوليا و يقطع الفلفل مربعات و يضاف الي السلطة
يخلط مكونات الدريسنج و يوضع فوق السلطة

يمكن استخدام قلوب خرشوف معلبة بدل الخرشوف المجمد بس في هذة الحالة لن نضعة في مياة علي النار حيث أنة مستوي. بس يرجي غسلة جيدا من المواد الحافظة
