Sweet Potato Cupcake / Cake كيكة البطاطا


Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid, and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2, and phosphorus.


  • 1 cup whole wheat flour 

 ١دقيق اسمر صحي

  • 1 cup all purpose flour 

١ كوب دقيق

  • 2 teaspoons baking powder 

  ٢ معلقة بيكنج بودر 

  • 3/4 teaspoon cinnamon  

٣/٤ معلقة قرفة

  • 1 tablespoon wheat germ  

١ معلقة جنين القمح

  • Pinch of salt  

رشة ملح

  • Half cup skimmed milk  

١/٢ كوب لبن خالي الدسم

  • 2 eggs  

٢ بيضة

  • Vanilla 


  • Half cup vegetable oil  

١/٢ كوب زيت نباتي

  • 1 cup cooked sweet potato 

١ كوب بطاطا مسلوقة

  • 1 cup brown sugar  

١ كوب سوكر بني

  • 5 tablespoons honey 

  ٥ معالق عسل نحل


In a bowl mix all dry ingredients and set aside

In a food processor blend sugar, eggs, honey, oil, vanilla, milk and sweet potato

Add the dry ingredients to the sweet potato batter

Blend for seconds.

Pour in a baking dish in a 190 degree for 30 to 40 mins

For the cupcake pour in a cupcake tray for 10 to 15 minutes.
